slow cooked shoulder of lamb at 140deg for 3 1/2 hours in a madras / vindaloo masala. letting it rest now. yes you were right on the money @Hari Ghotra . thanks for the tips. 🌶️🔥😍

It's based on the Hari Ghotra madras recipe so you coat the lamb in the madras powder plus lemon juice, ginger and garlic. Marinade over night.

Cook up the masala and I add vinegar, sugar and tomato puree and some lamb stock and reduce it.

Foil line a tin and pour the masala over the lamb. Cover with foil, baste every hour. BOOM 💥
