Aubergine Pakora and Onion Pakora. Together with Vegetable Pakora and Samosa our startes yesterday evening with the family. Served with Mauritian tomato chutney (made with fresh tomatoes) and Mint Raita.

Hello @Sue Geen wonderful vegetable starters for a meal with meat!! For guests I prepare the Pakora in advance and freeze them. Before serving I put them in the oven at 100 degrees for about 30-45 minutes, the time for the aperitif!! Same for Samosa!! Coming out of the oven they lightly crisp! And all smells really great!
