you'll need a cylindrical press to make them and also cut a bevel around both ends

heat some olive oil and butter in a cast iron dish.

crush 5 cloves of garlic and also add thyme and rosemary to the dish.

fry both ends of the potatoes until light brown and season.

prepare some chicken stock and add to the dish about 2cm depth. when simmering put in oven at 170 degrees.

baste every 15 minutes and top up chicken stock as required, you'll probably need at least 700ml.

cook until tops go dark.
