@dcmorris27 just use pork mince as @Jo Dunn suggests. You can blitz it to make it fine with the spice mix.

@Jo Dunn would so love to cook some of these but cannot get sausage meat like in UK here in France. @Hari Ghotra or anyone else, any suggestions on how to turn their sausage minced meat into something close to UK sausage meat?
