@Jo Dunn I had a sea bass fillet. Not the chunky fish that the recipe actually calls for, but it works well enough if you cook it somewhat shorter. Chillies… I used three between the two recipes, I think two of those went into the HNM. Then again, I sorta halved both recipes, so I’m afraid that the quantities don’t give much guidance :-) Much of the heat may also derive from the ginger and mustard seeds in the AB.
