I've cooked with bitter gourd a couple of times, they make good Sri Lankan curry, though I did have a total failure making a south east Asian style stir fry with them.
@latif Your Mauritius way sounds interesting, might have to try that.

@stripybag the small young gourds are better then the big over ripe ones. They are more tender the big ones can be full of tough seeds and the skin is tough too so choose carefully.

In Mauritius we are very fond of bitter gourds. We do them in a very simple way: just fried with onions and some garlic. If you want, you can slice in a tomato. It’s a dry fry. And as you mentioned, an ideal accompaniment @stripybag

I tried bitter gourds as an experiment and liked then, Hari included a recipe for stuffed gourds which I haven’t used yet. The gourds in the local market are too small to stuff, I need to go to the Exotic to buy some large ones.
They are a good accompaniment @boo,@Mark Harvey and @ latif👍🎃👻

Since we are in Halloween mood, and remaining in the context of vegetables, I would say bitter gourd is the exact opposite of pumpkin @stripybag

In Mauritian creol/dialect, when we speak about “bitter gourd days”, we mean that those were bad days, days of penury, days we don’t want to re-live again...bitter days...bitter gourds😢 @stripybag @boo
