So I knead the cream cheese with a tablespoon of ground barley or semolina. Leave it for an hour. Then I make the balls with a scoop for icecream, that works well. Inside the balls I put some almond paste. The white balls look great in the golden saffron milk, topped with green pistachios. Wonderful flavour!
