Hi @Sharl ideally pakora fresh is best but you can make them then reheat in the oven and they will crisp up again 180c
The meat make the sauce an put in the meat so it absorbs the flavour - I hope you enjoy it!

Best fresh, but failing that you'd need to "refresh" in the oven. Good luck and Merry Christmas @Sharl đź’•

I've used cooked meat many a time in the sauce

just add it maybe a couple of hours before serving, just simmer for about on a low heat for 8 mins and then just leave it with the lid on.

I haven't done it for a vindaloo but it works great with madras, bhuna essentially any deep flavoured masala

Best is fresh from the pan! But if you have guests, I suggest making them in advance, freeze and after defrosting heat at 100 degrees in the oven. That works well! Good luck! @Sharl

thanks @Mark Harvey Also was woundering if you can make the vindaloo without adding the meat or marinating it? I am thinking make the sauce in advance and chuck in left over Turkey or pork when reheating it? @Hari Ghotra can you shed some light on both questions please? x
