Has anyone tried to use sous vide techniques with Indian cooking? I’m thinking about trying something like tandoori chicken in the new year and then finish off on grill. Any ideas?

The cooking time depends on what pieces you are using. Chicken breast at 62 degrees about 30 minutes, chicken legs at same temperature about 4 hours. @harv.azad

I don’t think it would be too different from slow cooking. I’ve been thinking about it myself: make the masala, add meat and mix, then pop it in a vac bag and slow cook it for a couple of hours. I’d think you could use most of @Hari Ghotra ‘s slow cooker recipes.

Works really well @harv.azad really tender and and sooo moist. You can use it for lots of marinades too!
