Today,my wife and I made the madras recipe, but with chicken instead of lamb. We had some potatoes that needed cooking. So away we went and followed the recipe. Oh my word! What depth of flavours, richness of aromas! It’s not for the faint hearted. It’s a grown up curry. We thoroughly loved it, and we have added this one to our repertoire!
