So here’s a question for Hari. Actually for all professional chefs. How do you feel when you work up a recipe, and people say” I made it without ingredient A or B etc, or I added ingredient C”.

Hi @Jeff Hills it really depends on the recipe and the ingredient. Mostly I feel that you have to use recipes as inspiration and tweak them and cook them in a way that suits you and your family. Thankfully with many indian dishes it’s ok to make changes to the meat, spices, chillies etc. Other times the substitutions can be completely random which can be a bit odd. But mostly I try not to judge and am happy in the thought that the recipe has got someone thinking and cooking which is better then a take out!
