I’m in a mood for experiments today: broccoli curry is the result. Basic masala with onions, garlic, brown mustard seeds, cumin seeds, fennel, tomatoes, ginger, red chillies, turmeric, salt and Kashmiri chilli powder. Then add chopped up broccoli, stalks and all, the juice of two lemons and a splash of water. Let it simmer until the broccoli is cooked. Blitz it with a stick blender, adding hot water until you get a soupy consistency. Spoon through some garam masala and top off with coriander.
