The pakoras are not "deep fried" (like potato fries). I fry them golden brown on both sides in a frying pan with 0,5 centimeter oil. The oil can be re-used 3 times.

For the batter I take (for this portion, serves 4 well!) 80 gr gram flour, 20 gr rice flour, 120 gr cold water, salt, a pinch of turmeric and a pinch of chili powder. Optional roasted cumin seeds. @traceyross

Pakora is a great starter! I like it as well with chicken, prawns and squid.
