Unfortunately I forgot to buy the cauliflower for the dinner today 😣 So I had to take what I found in my kitchen. Inspired by @Hari Ghotra lemon rice recipe I made a Coconut-orange-rice...and I have to say... Not bad 😉

I will try this!! @Andypsilon A very tasty and delicious masala! But for the “finish” I will proceed differently. I will add the coconut cream to the tomato masala. That gives a wonderful colour and a lovely taste to the tomato sauce. It will be served with Basmati rice! And we drink a glass of orange juice.
I think you made a very creative dish!

Hey @boo. This was a salty one. I made a classic masala with mustard seeds, cumin seeds, caramelized onions, ginger & garlic paste, kashmiri - chili, turmeric, salt and fresh grinded coriander seeds, 200g canned tomatoes. Then I added the pre-cooked rice. The juice of 2 oranges and at the end I gave a teaspoon of sugar and garam masala to the dish to buffer the acid from the oranges a little bit.
