Right this is going to make me look like a right muppet, but I'm having a real nightmare cooking basmati rice.
I tried your absorption method @Hari Ghotra top was nice and fluffy but stodgy half way down, yesterday tried the draining method with lemon juice to try and keep it all separate and then laid it out on a tray but still stodgy 75% of it

@Hari Ghotra I did try your way but maybe the pan base wasn't wide enough, so tomorrow I'll carry out a test run with yours & @Jo dunn way & report back

Cheers @Jo dunn I Always wash it until it runs clear & leave it for 15 mins, but I've never put the foil under the lid & don't leave it after I switch it off so I'll try your way tomorrow

I get asked about rice all the time @ken.macritchie
Have you watched the you tube video?
Choose a wide based pan with a tight fitting lid
Wash 4 times - gently.
1 mug of rice for 3 people
2 mugs of water (I don’t soak)
You bring the rice to a rolling boil for a few minutes so the water evaporates
Turn to the lowest heat on the lowest hob
Cook for 10 mins
Take off the heat, leave the lid on for 2 mins
Take lid off and let the steam rise for another 2 mins - when you come back the rice will be standing on end
Gently fork through it.

Ahhhhhh, the dreaded rice. I've posted this somewhere before. But.... IMO you should wash very best basmaati rice 4 or 5 times, then leave in water 10 to 15mins to soak. Next drain the soaking water out, then add 1and a half times water, bring to boil, reduce heat, simmer with a folded tight tin foil 'covering' , folded over to seal the top of the saucepan, under the lid 7 or 8 mins. Switch off heat and leave it alone 10 mins! Don't touch, don't open, don't ever stir!! NEVER believe anyone who says add twice as much water as rice, whether you soak the rice or not! It carries on steaming under the foil and lid. Remove lids, fork vrry gently to separate the grains. Perfect every time! 🍚💕
