@Nadliow I needed some tries before serving good Ras Malai! But it was a good experience!
Make the paneer, the sugar sirup and the fragrant milk in the same way as Hari describes it. I add a tablespoon of finely ground semolina to the paneer, stir and leave it overnight in the fridge. Meanwhile I ground the almonds very finely, mix them with icing sugar and rose water. You don’t need much, for each paneer ball (size of a golf ball) the size of a chickpea. And then, start making the balls! Delicate job! I make the balls with an ice scoop, dive the almond paste in and cover the little hole with wet fingers. And then I drop the balls into the sirup. One after the other. Don‘t cook!! Let it simmer on a very low flame!! Leave to cool in the sirup otherwise the balls disintegrate. Put the balls in the frangrant thick milk and enjoy!!
Break the recipe in steps and give it a try. It’s not really complicated but “les quenelles sont fragiles”!!

@Nadliow Hari offers a recipe for Ras Malai in this APP. I’ve been making Ras Malai for years now and my recipe is quite similar to Hari’s. But I stuff the paneer balls with a paste of finely ground almonds and icing sugar.
