Easter weekend is looming and I am sure you all have plans to be with friends and family so I wanted to get this one in early in case you decide to do an Indian twist on your Sunday roast next weekend. This is my Mutton Raan - 2 marinades over 48 hours and then a low and slow cook until the meat falls away. It's #recipeoftheweek time!
Do be careful at the end that you don't burn the honey!
What do we think??

Now it happens that my usual sauce for roast mutton is to add some Merlot to the juices, some mint and a little vinegar, seasoning and honey and reduce using a bit of flour if necessary. Would that be allowed; or should I leave out the mint and vinegar this time 😂?

It’s great to stuff into pitta with salad or with lemon rice, spiced runner beans. You can make a sauce with the juices too @fionamcd62

I get hungry just looking at the recipe, but unfortunately I cannot sell “cute” meat on the guests I’ll be having. Especially with bone in. :-(
