Last nights lamb Karahi. Jury is out for the favourite! Karahi, bhuna or balti 😂. @Hari Ghotra lamb was tender but how does the local Indian get the lamb melt in your mouth tender? Should I cook it longer before adding the masala or would that over cook it? Flavours were amazing x

I cooked my lamb in my big casserole pot. Cooked my masala in my Karahi then added lamb after an hour. It was very tender - just not melt in the mouth! 😂. @hari Ghotra. So loving this and advice - come to Scotland and do a cookery class!

It really depends on the cut you use - I usually find neck fillet gets really tender and with the karahi you can check when it’s super tender then add to the masala. What cut did you use @day_kate ?
