Well I did it again, Laal Maas and I think this might just be my fav now. It is just awesome!!! With a few added garlic cloves and HM chicken stock instead of water this has a completely unique but beautiful and intense flavour. Nice on @Hari Ghotra

I just keep any bones from any chicken I buy and freeze em in one bag until I’ve got plenty to make a stock @Jo dunn- also but carrots leek celery etc when it’s in reduced section, chop in big chunks and freeze. That way I’ve always got what I need for my stock.

I'm also using a lot more home made chicken stock in recipes @Damian Green @Mark Harvey . Works wonders! Got lots of stock bones from great butchers up here. 🐔🐓😀

Love the idea of adding garlic - seems to fit in with the simple story of hunters making a meal from simple ingredients but I think it would add a lot of flavor

love the look of this dish. found it under hot and spicy from hari. question: how many teaspoons of kashmiri chili powder would equal one kashmiri chili? i just have the powder, it would be really hard to guess. i think i will make a masala tomorrow for my slowcooked lamb shanks from today...
