Happy Sunny Tuesday!
I'd love you to try this little BBQ dish this week - it's called Patra Ni Machi and is fish cooked with a light delicate green marinade of mint, coriander chilli, coconut and a few other bits. Use any meaty white fish you fancy and wrap in a banana leaf (or just use foil) and baked on the barbi. It's super light and fragrant and I would live to know what you think.

Who is up for the challenge? #recipeoftheweek

looks fantastic! I think fresh mackerel would work well but only really fresh because it tends to get a stong oily taste after a couple of days !
I have banana trees in my garden . can't wait to try this out . what other spices should i add !
Best wishes and greatings from Costa Rica !

Ohhh I’m not sure @Sue Geen it’s quite an oily fish and can’t see the fresh mint working too well. But I could be wrong!
