Thanks @Hari Ghotra - I have an electric induction cook top and I think I probably need an extra setting between too low and too high :) I have low settings that don’t even cook the lamb, and higher settings that simmer it, sounds like I need something in between ... wish I had gas :)

Like the look of that @Andrew Cockburn - it’s all about low and slow for lamb tenderness which is why your oven works. Is you stove quite vigorous?

You might be right @Jo dunn - Lamb isn’t very popular in the USA and probably not as good as you get in the UK. I have Hari’s slow cooker book - time to take a look I think!

Re. tenderness of lamb in cooking ..?. I wonder if US lamb cuts differ overly from over here. I find lamb tenderises beautifully, as long as it's given enough time and that it's allowed to cook really low and slow. Slow cookers /crockpots produce melting lamb dishes, so much so you have to watch the lamb doesn't overcook!!! Just my penny's worth!! 💕

Additional info - I have struggled with lamb tenderness using stovetop cooking, not sure if it’s my stove or what but it’s been hit or miss. But I have found that putting the pot in the oven for an hour at about 375f seems to cook the lamb well and keep it tender

I will try - it’s a very intense dark masala, fragrant like a Madras with a texture like a Bhuna, rich and spicy ... does that help?
