It's a wet and windy Monday here so as we head towards Autumn here is a lovely mid week pork curry to try. It's my Keralan Pandi which I think you guys are going to love. Scented with fennel its quick to cook and tastes pretty good.

You can just use a squeeze of lemon juice until you get some @deborahhill1422 it does help darken and thicken too

Going to make this tomorrow although I don’t have any tamarind paste, will it make much difference I leave it out?!Something I’ve never got in our local supermarket but will get some next week when I’m home in Glasgow @Jo dunn @Hari Ghotra

@Jo dunn !!! hi thank you for all the good ideas and pointers!❤they are very much appreciated. been so busy, eating everything what flies my way 🤪...made a nice pumpkin soup w kasori methi, kashmiri chili, gloves, peppercorn, cinnamon bark ( a lot) caldo de tomato ( tomato based soup buillion powder), himalatan salt, bayleaf, creamed up w heavy cream..wonderful on a cold day....

@hvondrus Hi there, I feel sure you can use whichever meat suits you best, to be honest. The recipe is for pork, but you could use chicken or lamb, or anything else. Bear in mind lamb can need different timings depending on the cut and method you choose. The slow cooker actually cooks lamb more quickly than you might expect. Hope it turns out great. Do post final pic! 💕
