Yesterday’s supper: jeera chaul with pumpkin curry. Not Hari’s sabjee but a variant made with a masala.

OK @Hari Ghotra : it’s basically your sabjee recipe, modified slightly so it goes better as a main with rice. I started with cumin, fenugreek and dried chillies as per your recipe. Then fried a finely diced onion until it developed brown edges. Added three chopped tomatoes (would amount to about 3/4 tin, I’d say), 1 tsp turmeric, 1 tsp kashmiri chilli powder, 1/2 tsp salt, 1 finely chopped green chilli, 1 tsp crushed coriander seeds. Let it develop to a masala, then add chopped butternut squash, mix well to coat with the masala and simmer (covered) for 20-25 minutes. Check for doneness, mix in 2tsp amchoor, top with chopped coriander and serve.
