Here’s a question guys - how do you make your roast potatoes? Goose fat, butter and oil, coated in flour? Would love to know your secretes for getting crispy roast potatoes?

I prefer a little duck fat for a nice crisp coat on the potato

Boil briefly, then scuff them dry - add duck fat and salt and cook in hot oven.

Steam them, in hot duck fat then once there brown and crispy get the potato mashers and break the crunchy skin for a double crunch potatoes (Jamie Oliver)

@Arthur vdH that sounds soo yummy...i started making sweetpotatoe w chipotle season. peel, cut in steakfry size, put chipotle seazon on them and butter, bake them in oven at 350 until goden brown. if i would want them crunchy i would cut them much thinner and after softening fry them a second time. salt and serve.

can also be dine w yams or regular potatoes

I use Marcus Wareing’s method: cook them, peel them, let them cool down. Then slice them, put them in hot vegetable oil until they start crisping up. Then add chunks of butter across the pan, let that foam out and turn slightly noisetty. Take the crispy chips out and drain on kitchen paper. Add sea salt and mix.

I tried chaat masala instead of salt the other day. That’s also an interesting twist.

Very hot Rapeseed oil and coated in semolina. the grains add a great crunch 🥔🎅

oil for me. previously sunflower our, but more recently rapeseed oil.
