Have you ever used the rendered fat of the excess fat taken from a leg of lamb / mutton as your base oil? I’m doing Sooka masala mutton on the bone today and taking fat from the leg I’m just rendering it down to use possibly!? Will this improve the dish or possibly be too much!?? I’ve done this before with a steak and it’s awesome

Hi @Damian Green sorry I’ve been teaching today. Lamb fat is very heavy and will make the curry very oily. I’ve not done it myself so looking forward to hearing how it turns out.
