to cook the chicories first have to just cut the dry bit atvthe top of each chicory and remove the outer leaves then insert the tip of your knife into thw core an cone out some of that core this will avoid having too much of a bitter taste then do a cross cut about 1 inch deep and rinse the chicories in water don't leave them in water as leaves may spread open. Put a good knob of butter in a large pan when melted and starting to sizzle add chicories to the pan and season with salt and pepper turn them over and season again. Add 2 to 3 sugar lumps that's about 2 to 3 tsp of loose sugar. Pour water up to 2/3rds of the chicories. bring back to the boil then reduce to a gentle simmer and cook for about 2hrs. Keeps a check on them as they can easily burn due to the sugar. you can always add water is required. If cooking without sugar expect these to have a slightly bitter taste but this is not unpleasant.

@stripeybag these are chicories which once cooked were drained and left to cool then rolled into a slice of ham and placed into a greased ovenproof dish then covered with a cheese (emmental/gruyére) bechamel then topped with grated emnental/gruyére then place into oven till cheese has melted an firmed a lovely golden brown crust. serve with a piece of French stick to mop up 😘
