Yesterday's lunch was csntonese sweet and sour chicken. Today planning to make a vegeterian Indian pulao 👩‍🍳

Thank you @Hari Ghotra 😊. It's quite tasty indeed and very simple to make.
For every 500g of cubed chicken breast;
. 1 tbsp soy sauce
. 1 tbsp vodka ( typically it's shaoxing wine but it's not readily available in Egypt)
. 1 tsp bicarbonate of soda
. 1 egg
. 1/2 cup corn flour or potato starch

. 1 red bell pepper,1 yellow bell pepper and 1 green bell pepper cut into large cubes. ( if bell peppers are large, use half of each).
. 2 medium or 1 large red onions cut into large cubes.
. 1/4 of a pineapple cut into cubes.
. 4 garlic cloves, chopped.
. Oil for deep frying.

Sweet & sour sauce:
. 2 tbsp distilled white vinegar.
. 2 tbsp rice wine vinegar.
. 2 tbsp vodka
. 2 tbsp white sugar
. 2 tbsp soy sauce
. 1 tbsp ketchup
. 1 tbsp ginger grater and squeezed to use only the water and discard the fibers.

1. Throughly mix the marinade ingredients with the chicken cubes except for the starch. let the chicken stand in the mixture for 10 minutes then toss to coat in the starch.
2. mix the sauce ingredients in a bowl and set aside.
3. Heat oil to 180c (hot oil) and start deep frying onion cubes for a minute or less and remove on sieve then do the same with the bell peppers.
4. Next fry the chicken in batches and try to add each piece separately to the oil as they tend to clump. Remove from oil when they are golden brown about 1 to 2 minutes.

5. In a very hot wok, add 2 tbsp of oil and the crushed garlic, toss till fragrant ( few seconds ) then add the sauce and let it boil to thicken. when it reaches desired consistency, add chicken and bell peppers and toss to coat in sauce and finally add the fresh pineapple cubes and make sure everything is well coated with sauce and heated through.
Enjoy it with boiled basmati rice or jasmine rice 🙂
