So this is the 4th time I have made vegetable pakora, and oh my they get better every time. This batch I doubled my spice quantities as my base was 3 small onions, 5 small potatoes, half of an aubergine, and 4 chillies, paired with your version of mint and chilli chutney! The flavours are amazing!! Thank you for your inspiration.
