Fusion cooking today: oven-roasted pork belly with crackling, basmati rice and broad beans in a spicy tomato sauce. The tomato sauce is a masala with cumin, ajwain, onions, garlic, tomatoes, ginger, kashmiri chilli and turmeric.

Secret method, @Hari Ghotra ? No, found it on the Internet actually :-) Take the pork belly, trim it, score the skin and fat (don’t cut into the meat). Cover the skin with salt, make sure it gets into the cuts. Put in in the fridge, uncovered, for a couple of hours so that the skin can dry out.

Come cooking time, preheat the oven to 180°C (190 for an electric one like mine). Take the belly from the fridge and thorougly dry the meat and skin using kitchen paper. This will remove most of the salt too. Then put the meat skin side up in a roasting tray, on a rack so it doesn’t sit in hot fat later. Generously apply freshly ground black pepper and some new salt, then drizzle on some olive oil. Work the olive oil, salt and pepper well into the cuts in the skin.

Put the pork in the oven for an hour and a half, two hours, depending on the size of the pieces you have. Check every once in a while. When the skin starts to show tiny blisters, increase the oven temperature to 210°C (220 for electric) and cook for another 15-20 minutes, until the skin is hard and crispy.

Remove the meat from the oven, loosely cover it with aluminium foil and let it rest for 10-15 minutes. Remove the crackling carefully and cut the meat into thin slabs.
