How are you doing today? Just thought I'd check in as we continue this lock down period. All ok here but my hayfever seems to have kicked in and my eyes are steaming and i'm sneezing like crazy!
Did a spot of clearing up in the garden and I needed to do something with the over grown chives in my garden so after much deliberation I thought I would go to Jamaica on my #kitchentravels and do my take on jerk chicken - yes it was super fiery but oh so good.
Do you have any marinades that you use on the BBQ? Would love to know your secrets.

Good morning Hari. I have just found your recipes on YouTube. First thing was samosas then vegetable pakora + cauliflower. Fantastic. I do have a throat problem so have to go short on the chilly. On lockdown in Spain but warm and sunny. Tomorrow it’s Thari Wala chicken with garlic nana’s
Any help with the spice that would not burn the throat would be appreciated. Mel

@Hari Ghotra Hope you’re feeling better by now. The chicken looks very tasty. The only extra thing I do for any poultry dish is brining, pieces or the whole bird and I add whatever the spices to the water of the brine solution before enhancing it with the topical rub or marinade.

I also love using a Cajun rub or marinade for BBQ food (or even oven cooking) . I make my own cajun spice mix, probably not authentic however is it super tasty and very moreish!

The spice mix:
2 parts - Paprika
2 parts - Smoked Paprika
2 parts - Pul Biberi/ Aleppo flakes (turkish red pepper flakes)
2 parts - Oregano
2 parts - Cayenne Pepper
1 part - Marjoram
1 part - Sage
1 part - Cinnamon
1 part - Celery Salt
1 part - Garlic powder
1 part - Salt
1 part - Ground white pepper
0.5 part - Nutmeg

You can apply directly as a rub or mix chicken in a bowl with juice of a lime and spice mix to taste.

The recipe surely looks tempting. And fiery … Are you sure that the internal temperature should be 165°C, @Hari Ghotra ? 165°F (~75°C) seems more appropriate.

I use a very similar recipt, just the addution of 1/2 tsp cinnamon and an extra chili. Always very good (although super hot!)
