my wife's from Cyprus, so usually it's just red wine, dried oregano, olive oil, salt and pepper like her parents do it. this was a Greek recipe - lemon juice, olive oil, garlic, cayenne, salt, paprika, oregano, cumin. just mix it all together with the pork and marinate for an hour.
