It’s almost time for us to get together and cook again and I’m excited!!
So for this weeks #fridaycurryclub i’m going to show you how to cook karahi lamb with some lemon rice. It’s a fragrant lamb dish infused with ginger and garlic and chunky onions. If you want to use chicken or veg that’s fine too.

If you want to cook along this is what you need:
600g leg of lamb or lamb neck fillet, trimmed and cubed
5 whole garlic cloves, peeled
1 tbsp ginger, grated
1 tsp salt

2 tbsp butter/ghee
3 fresh tomatoes, finely chopped
1 tsp turmeric
2 chillies, chopped finely
3 tsp coriander seeds, crushed
3 tsp of cumin seeds, crushed
1 tsp red chilli powder (optional)
1 onion, finely sliced
2 whole chillies, sliced lengthways
1 tsp garam masala
Handful coriander, chopped

Lemon rice
2 tbsp veg oil or coconut oil
1 tsp mustard seeds
7-10 curry leaves
3 green chillies
1 tsp salt
½ tsp turmeric
2 tbsp peanuts or cashew nuts
2 lemons
200g Basmati rice

Definitely chicken couldn’t get lamb, really only eaten in this part of Italy at easter so you don’t see it often or great quantities. More of these guys! 🐖🐂

@Dean Peckham there’s a bit of a shortage at the moment I sell them dried here which are great to have in the cupboard
