Hey guys Happy Saturday!
I posted this recipe a few years ago but as it's #internationalpineappleday I have just added it to the app as a new recipe. I know it's unusual and I was very unsure about it too but I have to say it really was very tasty indeed. The pineapple has a unique fruity tang that is amazing with the chilli heat and creamy coconut. The flesh cooks to create a meaty consistency that is really satisfying. So tell me will you give this recipe a go?

Sounds good! 😃I wonder if adding white potatoes would add to the heartiness? Would that taste coordinate? 🤔

Cor Hari that sounds good I love fruit with a chilli hit. I have eaten Mauritian chilli fruit salad many times before courtesy of my work colleagues.

I happened to be thinking about this recipe earlier today, as the greengrocer’s had some lovely pineapples. Didn’t buy any though. I cooked this recipe twice before. I really like it. Hot, pineapply sweet and coconutty, I think it’s a winner!
