Here is the dish we will be cooking in this weeks #fridaycurryclub and it’s one that if you haven’t tried you really should. This is chilli paneer and it’s spectacular. For those who don’t know what paneer is, it’s indian squeaky cottage cheese and I love it. I know it’s not everyone’s favourite ingredient so you can cook along using Halloumi or chicken if you prefer. I also thought we could make some vegetable pakora too with my mint chutney. It’s always amazing to have you cook along with me so please do join me at 6.15pm on Friday here https://youtu.be/vw4nS-_EmaU This is what you will need: Chilli paneer 400gms Paneer chopped into cubes Oil for frying Paneer Batter: 3 tbsp plain flour 1 tbsp corn flour 1 tsp Kashmiri chilli powder Salt to taste 2 or 3 tbsps water Chilli Sauce 2 tbsp rapeseed oil 1 tsp cumin seeds 3-4 Kashmiri chillies, soaked in hot water 3cm fresh ginger, roughly chopped 4 cloves of garlic, finely chopped 1 red onion, chopped into cubes 1 red pepper, chopped into cubes 1 green chilli, slit lengthways 1 tbsp soy sauce Sea salt to taste (if required) 2 spring onions, finely sliced for garnish large pinch of coriander, chopped Veg pakora: 100g gram flour, sieved 1 medium onion 3 medium potatoes 1 tsp of salt 2 tsp of garam masala 1 tsp of turmeric 2 chillies, finely chopped 1 tbsp ginger, grated (optional) Handful of coriander, chopped 2 tsp of dried fenugreek leaves 1 tsp of cumin seeds ½ tsp of red chilli powder Water Oil for deep frying Give me 👍🏽 if you will be joining me and as always if you have any questions then hit me with them before Friday!
