Hi, I’ve tried the madras curry kit twice now and followed the instructions to the tee. However, it tastes good but I don’t get the dark colour of the sauce at all, it’s more of a ticka colour. What am I doing wrong or is there a dark spice missing. I’ve always know madras to be dark . Help please, just cooked this today

Hi everyone, third attempt at the packet madras. Hari I’ve tried what you advised, cook onions longer, tamarind used twice and still no dark madras colour. I’ll post pictures but no way will I get the dark madras colour with this curry kit. Perhaps if you cooked your own curry kit you could show what myself and others are doing wrong.

Are you taking your onions down to a dark, dark brown colour @nigelbeck1 ? I can see onions in the sauce here ideally they should cook down to a pulp and be dark like in a French onion soup. Also with the tamarind soak it once and use them resoak and use again.
