Question - how soon after preparing (filling) samosa do I need to fry them up to cook them to eat?

Do you mean once your samosas are made? You can do then the day before and fry the next day if you want to but make sure they are spread out and use grease proof paper in between them do they don’t stick to each other. Put on a tray cover with cling and store in the fridge until you fry them.

I usually wait for the filling to cool down before putting them into the pastry to cook đź‘Ť
