My wife and I went on honeymoon to Thailand in 1998 and we flew Thai International. On the flight to Bangkok I had my first taste of a Panang curry and loved it. The menu included a recipe, which I kept and cook regularly. Maybe it's cheating a bit as it uses a ready made red curry paste, but it's really good and so quick to make. Only tips are - use a bit more meat as it makes loads of sauce and make sure the peanuts are really finely ground. Thought some of you might like to try it!
