one if the things @Hari Ghotra emphasises is the importance of the ref of kashmiri chilli in recipes to provide a vibrant colour to dishes.
I have been using Kashmiri Chilli (KC) purchased from Hari's website. As I am near to running out I bought a packet of fudco KC from Sainsburys with my weekly online shop. this turned out to be a lot darker than the KC from Hari's shop.
I next turned to Amazon who sell TRS KC. This is a more similar colour to Hari's, if a little more muted.
