I’m going to be talking to the amazing Ernest live from Madagascar and he will be showing me how to cook one of his family favourites - Malagasy Laoka with Coconut and Vanilla Rice, and if you love chilli then his hot, hot, hot Sakay is on the menu too!
As a field officer for WaterAid, Ernest will be chatting to us about what it's really like to live in Madagascar and he will be sharing some beautiful pictures of the amazing island too. Please get your questions ready as he is looking forward to chatting to you all!
This is what you’ll need to cook along and I promise you it’s going to be incredible! Any questions ask below.
So who is going to join me in (sort of) Madagascar on Friday?
For the Prawn Laoka:
500g of shrimp, prawn or any fish fillets - or go veggie and vegan with potatoes, tofu or mushrooms
1 green pepper
1 onion, chopped
2 tomatoes, chopped
4 garlic cloves, minced
1 tsp ginger, grated
juice of 1 lemon
200ml of coconut milk
1tbsp olive oil
3tbsp cooking oil
For the Coconut and Vanilla rice:
500ml of water
100ml coconut milk
1 vanilla pod, or a teaspoon of vanilla extract
1 tsp of salt
For the Sakay (Malagasy spicy condiment):
½ cup of fresh pili pili or red Thai or Red Birds eyes chillies
2 garlic cloves, peeled
4cm piece of ginger, peeled and sliced
2 tbsp olive oil
Salt to taste
