Well... not used to cooking basmati this way, took my eye off the ball and it overcooked. My vanilla pods didn’t have any seeds so I scraped the insides and used that. Now the strange thing is the rice has a stronger aroma of vanilla than flavour. My sakay isn’t very blended because I don’t have a mini blender, still!! However, i’m so glad I only used 6 thai chillies because it is HOT.
A very different curry to what we are used to cooking but tasty and light.
I would use a tad less turmeric next time, it was a little upfront for my palate.
BTW I chucked the tomatoes in right at the end as they were sitting there, bit like the Ikea furniture when you always have a screw or three left after assembling something🤔 Did I miss a step?
