Pork vindaloo in the making. This is going to marinate all night, so I’ll be done quickly tomorrow when I start cooking.

Spicy paste this time, with real dried Kashmiri chillies. Spicy enough to make a cat bark, I think!

@Sue Geen Not as such, it’s something that just came to me. It is inspired by a children’s joke: “Do you know how to make a cat bark? Douse it with gasoline and hold a lit match to it.” (WOOF!)

We can also make dogs meow. We freeze them and pass them over a tablesaw. (MEEEEOOOWWW!)

@Mark Choice I checked, but hamlappen are from higher up the leg. They’re actually thick slices of ham. Pork butt, as it were :-)

Thanks Arthur, I’m from South Africa. Google assisted with the translation and hamlappen being ham hocks or pork knuckles. A good cut I think for a curry. I’m keen to see the result. Happy cooking.

@Mark Choice In Dutch we call them “hamlappen”. I’m not sure if there’s an equivalent cut in Britain. It’s cut from the rear leg.
