Thank you Hari, for last night's #fridaynightcurry , it was very enjoyable to join in. I have never cooked anything from any of your recipes that I haven't liked. However, I was disappointed with the result of my Aubergine Curry. I got home from work late and rushed to get everything ready. I was tired and made a few mistakes - the worst being my curry catching on the bottom of the pan, which would have taken more than just a splash of water to rectify. I transferred the food to another pan and continued cooking. I was afraid to cook it for too much longer in fear of it sticking again. When I was finished, I don't think it was cooked enough and I thought it tasted a bit bland. I put it all into a plastic storage container. Today, I thought I would eat the curry rather than let it go to waste. I melted some ghee in a pan and heated the curry together with some extra chilli. It tasted wonderful and the texture of the aubergine and potatoes was perfect! I think some magic occurred during the night 😋
