Here is my #fridaycurryclub Achaari Bangun. I've never been a fan of aubergine ๐Ÿ† and I'm still not โ˜น. it's the texture I don't like - puts it right down there with paneer ๐Ÿ˜. The masala was tasty and would go great with lamb ๐Ÿ‘ I was pleased with the parantha - square roti is my specialty ๐Ÿ˜… The only bit that frustrated me was I made perfect circles before the folds ๐Ÿคฆโ€โ™‚๏ธ

@gordonmoore I get what you saying Gordon. Born and bred in Cape Town we have had meat most of our lives. I find the vegetarian options provide a welcomed and pleasant change. I loved the spice combination of the pickling spice in this dish. That was a game changer for me vs std grilled or baked aubergine.
