It was delicious, but next time I'll cook the aubergine in the oven first, then add the toppings and then grill them. I took my eye off the grill and they became a little crispier than they should have. 😂😂 but still tasted really good.

@Mark Choice yes. it was tangy and sweet and creamy at the same time. aubergine is great at absorbing flavours.

Looks delicious. I think the peanut and spice crust, balanced out with the tamarind will work nicely together.
