It’s Wednesday and we all know that that means - time to start getting ready for this weeks #fridaycurryclub As it’s #watersavingweek it felt right to tie it in with my @wateraid partnership. This week we are going to Zambia to chat and cook with Chileshe. He will be guiding me through typical Zambezi meal and oh my it’s an incredible fish dish for the summer! Join me at 18.15 BST here’s the link This is what you will need: Ingredients: 2 whole sea bream (sea bass fillets if you prefer) Veggie/Vegan option - Aubergine/ cauliflower steak or block of tofu 1 onion, sliced 1 green pepper, chopped 1 tomato, chopped 3 garlic cloves 2cm piece of ginger 1 red chilli ½ tsp salt Half a lemon Fresh coriander (optional) ½ tsp chilli flakes For the fish masala: 2 tsp coriander seeds 2 tsp cumin seeds ½ tsp black peppercorns 5 curry leaves ½ tsp turmeric 1 tsp chilli powder 1 tsp methi/dried fenugreek leaves 1-2 tsbp vegetable oil The perfect accompaniment is rice and we will talk about that during the live session as Chileshe has a lot to say about this!
