I forgot to take pictures of the vindaloo pork plated up, but I can assure you that it tasted amazing!! I used 4 dried cayenne peppers in stead of the kashmiri chilies, an also added a blob of tomato paste for colour. My hubbie insisted on rice, and I cooked it with some cardamom pods, and added raisins and butter to soak / steam with the rise at the end. Probably not authentic, but veery tasty.
