So tonight I made Chettinad chicken curry using deboned chicken thighs. Packed with flavour with the roasted whole spices, including coconut shavings, dried and then blitzed into a powder. It was delicious and made white basmati, a bought in roti and I made a carrot, mustard seed, cumin, tumeric, ghee with yoghurt as a raita.
