An experiment ragazzi! Wild boar in freezer, courtesy of Mr Bun’s ex bro in law. Need to use it , need to make vindaloo. Now, normally one covers it frozen still with a ton of rough chopped onion, garlic, carrots, celery, junier berries, bay, rosemary, black pepper corns, parsley and leave it until it has defrosted. Then you throw all that veg away 😬 I can hear you wince Hari!! This process removes the selvatico ( gamey) taste and smell, however, our wild boar has been getting jiggy with domestic pigs for a fair few years now and so the meat is much less gamey these days. It then needs a lot of hours slow cooking to tenderise it , traditionally with a little of the above veg very finely chopped , herbs and a goodly slug of robust red wine. Let’s see what happens and if anyone has cooked a vindaloo for several hours please advise. 🐗
