Ingredients • 1-Cup Peanut butter • 3/4- Cup Honey • 3-Cups Old Fashioned Oatmeal • 1-tsp Vanilla • 1/2-tsp Salt • 2T unsalted butter • 1 bag dark chocolate morsels Dark chocolate is acceptable for diabetics Instructions Grease or line an 8×8 baking pan with parchment paper. Now in a saucepan over medium heat combine PB, honey, vanilla and salt. Heat until thoroughly blended. Remove from the heat and add your oats. Stir until the oats are evenly coated. Now pour the mixture into the pan and press it down. In a microwave safe bowl place the chocolate morsels and butter. Microwave in 30 sec increments and only until the chocolate is just about melted . Take it out of the microwave after each 30 sec  increment and stir. When you are ready to do the last 30 sec increment  check at 10 or 15 sec so that you don't burn the chocolate The poor over the pressed down peanut butter oatmeal meal mixture and spread it to form a thin layer that completely covers the bars  Then cover, and let set 8 hours or overnight.  I like to cut them into squares but if you want a bigger snack you can cut them into bars.  You can wrap them up individually for a quick grab and go snack or keep them in the pan, covered for storage. If you are using  9x9 dish increase the ingredient totals slightly
