So I’ve posted a picture of my super crispy chicken burger 🍔 before but now here is my recipe! You can use the recipe to make fried chicken or a crispy chicken burger. I really want to know what you think so feedback on this recipe would be much appreciated. What you need: 4 skinless chicken breasts /4 chicken pieces on the bone if you are making fried chicken 350g Yoghurt 20ml milk 4 cloves garlic, minced 4cm piece ginger, grated 1 lemon, juice 1 green chilli, chopped 1 tsp Kashmiri chilli powder 1 tsp garam masala 1 tsp dried fenugreek leaves Coating 100g plain flour 1 tbsp rice flour/corn flour 2 tsp baking powder 1 tbsp chilli powder 1 tsp salt vegetable oil for frying Make it dirty: mayonnaise 6 tbsp, mixed with 1 tbsp of you favour chilli sauce 4 brioche buns, halved and toasted iceberg lettuce, shredded 8 rashers of smoked streaky bacon, cooked until crisp sliced gherkins Slices of cheese or chilli cheese if you can find it How to make it 1. If the chicken breasts are large you can slice them in half 2. Mix all the ingredeints for the marinade and add the chicken and cover. Leave them to chill in the fridge for at least 2 hours or overnight 3. Mix the flour, with the seasoning in a large bowl. 4. Half fill a large pan with vegetable oil and heat to 180C 5. Heat your oven to 200C and get a tray with a wire rack ready. 6. Remove the chicken pieces from the spices buttermilk and dredge it in the seasoned flour, shaking off any excess. Ensure they are fully coated. 7. Cook the chicken, in batches, for 10 minutes turning halfway, until crispy and golden brown. 8. Drain on kitchen paper then place the fried chicken on the wire rack and keep warm in the oven so they stay crisp while you cook the remaining chicken. Ensure the internal temperature of the chicken has reached 72C 9. Toast the buns and smear with the spiced mayo then add the burger fillings of your choice.
